Our coffee comes exclusively from Campos, who only produce sustainable and ethically sound beans. We offer single origin pour over and cold drip and options from award-winning and specialty varieties such as Fazenda Mantissa and Sitio Sao Sebastiao from Brazil. Our baristas like to keep on top of the latest in coffee science and trends. It's why the Campos team visit us for monthly training sessions, and it’s why our customers keep coming back.
The coffee farms Campos select for the Superior Blend are the leaders in the Speciality Coffee world for their regions. Specialty coffee should not be confused with "gourmet" or "premium" coffee. The latter are marketing terms with no defined standards. According to the Specialty Coffee Association of America (SCAA), coffee which scores 80 points or above on a 100-point scale is graded "specialty." Specialty coffees are grown in special and ideal climates and are distinctive because of their full cup taste and little to no defects. The unique flavours and tastes are a result of the special characteristics and composition of the soils in which they are produced.
Coffee is best consumed during what we call a 'window of freshness'. Our philosophy maintains that you need to give the beans enough time to release any bad oils, but still retain those delicious roasted flavours that make a good cup of coffee a great cup of coffee.
We pride ourselves on using locally-sourced ingredients for our seasonal menu to take to advantage of the Top End’s tropical produce. Our chefs receive deliveries daily and we are currently working closely with two local growers to ensure we are utilising the best of what the Territory has to offer. The crew keeps an eye out for what's in season and what flavours are trending to keep our menu dynamic.
Sustainability and our environment are important to us so where possible, we reuse and recycle. On the odd occasion that something is left on your plate, that becomes dinner for one of our beloved customer’s pigs, Oprah and Kevin.
